La Vernia (Wilson County) and San Antonio (Bexar County) are proud to claim Wood Valley Bees raw, organic honey as their own local honey. Unlike other 'local honey' companies, Cristina and husband Tomas of Wood Valley never combine the harvested honey from their frames, and never import honey from other areas or other companies to bulk up their own. Rather, Cristina is an absolute purist; she won't even offer sugar-water. Whatever notes you taste in their honey is what the bees foraged through plants to find.
Like a honey Sommelier, she can taste the subtle differences from frame to frame of her bees very hard labors and where they foraged. She can detect which flora-notes are in a single taste of honey. Deeply appreciating the labors bees go through to create the liquid gold, she savors it ... explains it ... teaches it ... values it, and her beautiful bees, which she calls "her girls."
